Ingredients:

    Natural cooking spray
    1 1/2 cup low-fat milk
    2 cloves garlic, finely chopped
    1 sprig fresh thyme
    2 pounds russet potatoes, peeled and cut into (1/8-inch) slices
    Salt and pepper to taste
    1/2 cup grated Parmesan cheese

Method:

Preheat oven to 375°F. Spray a 7- x 11-inch baking dish with cooking spray and set aside.

Put milk, garlic and thyme into a small saucepan and heat over medium heat until hot but not boiling. Remove from heat.

Arrange a layer of potatoes in an overlapping pattern over the entire bottom of the prepared dish. Pour about a third of the milk mixture over the potatoes then season with salt and pepper and scatter a third of the cheese over the top. Repeat with 2 more layers. (Discard thyme or arrange across the top of the casserole, if you like.)

Bake until potatoes are tender and cheese is golden brown, about 50 minutes. Set aside to let cool briefly then serve.

Ingredients:
4-6 Russet potatoes, thinly sliced (about 4 cups)
3 tablespoons butter
3 tablespoons flour
1 1/2 cups milk
1 teaspoon salt
dash of cayenne pepper
1 1/2 cup grated sharp cheddar cheese, divided
paprika

Directions:
Preheat oven to 350 degrees. In a small sauce pan, melt butter over low heat. Mix in the flour and stir until incorporated. Add the milk and stir well with a whisk. Add salt and cayenne pepper for flavor. Continue to cook sauce on low heat until it boils, stirring occasionally with a whisk.
Remove pan from heat and add 1 cup of cheese. Stir well until all the cheese is melted and the sauce is smooth.
Spread half of the thinly sliced potatoes in an 9×9″ baking pan that has been sprayed with non-stick cooking spray. Pour half of the cheese sauce over the potatoes. Repeat with the rest of the potatoes and cheese sauce and top with the remaining grated cheese. Sprinkle paprika on top and bake uncovered for 1 hour.

Scalloped Potatoes

Butter for greasing the baking dish
2 1/2 lbs. potatoes (about 4-5 medium), peeled and sliced 1/8 inch thick
1 medium onion, sliced thinly
Salt and pepper
2 tbsp. fresh parsley, chopped fine
2 slices bacon, cooked and crumbled
2 1/2 cups shredded Swiss cheese
1/2 cup shredded Parmesan cheese
1 cup half and half
1 1/2 cups milk (I used skim)
2 tbsp. butter, cut into piecesS

Preheat oven to 350°. Grease a 9 x 13 inch baking dish with butter. Layer 1/3 of the potatoes in the bottom, top with salt and pepper. Layer on top of that 1/2 of the onions, 1/2 of the parsley, 1/2 of the bacon, 1/3 of the Swiss and Parmesan cheese. Repeat layers. Top with the remainder of the potatoes. Mix half and half and milk together, pour over potatoes evenly, sprinkle butter pieces evenly over top. Cover with aluminum foil and bake for 50 minutes – 1 hour, or until the potatoes have absorbed most of the liquid. Remove foil, cover in remaining cheeses and bake for 20-30 more minutes, or until cheese is browned and all the liquid is absorbed.
