    Melted margarine or butter, for greasing
    1.5kg Pontiac or Desiree potatoes, peeled and thinly sliced (about 4mm thick)
    300mls thickened cream
    4 garlic cloves, finely chopped
    Salt & ground black pepper, to taste

    Step 1

    Preheat oven to 200°C.
    Step 2

    Brush a shallow 1.5 litre (6 cup) ovenproof dish with the melted butter or margarine.
    Step 3

    Arrange 1 layer of potato slices in the greased dish, slightly overlapping each slice. Combine cream and garlic in a jug and pour 1/4 of the garlic cream evenly over the potato. Sprinkle with salt and pepper to taste.
    Step 4

    Repeat layering with remaining potatoes and garlic cream, pressing down after each layer of potato. Season between each layer.
    Step 5

    Cover the dish with foil and bake in the preheated oven for 45 minutes. Remove foil, reduce oven temperature to 180°C and bake for a further 15 minutes or until the potatoes are lightly golden and tender when tested with a skewer.

A bit of futzing, especially on the timing, but they are fantastic.

Ingredients
1 pound Waxy Potatoes
Rosemary (dried)
8 cloves Garlic

Directions
Peel the potatoes. Cut any large ones in halves or quarters, as you deem appropriate.

Parboil the potatoes for about 10 minutes.

While they are boiling, peel the garlic cloves.

Drain, then put the cover back on the pot, and shake the potatoes around in the pot, just enough to rough up the edges of them a bit.

Put in a roasting pan. Sprinkle some dried rosemary over them, and scatter the garlic cloves around on them. Drizzle with olive oil so that most surfaces of the potatoes are covered.

Roast for 35 to 45 minutes, or until potatoes are golden-brown and crisp. Check and turn half-way through.

Serve hot.

    1 cup sour cream
    4 oz Butter (1 stick)

Directions
Chop the potatoes and cook them in boiling water until fork tender, then mash and incorporate all of the ingredients.

    Step 1

    Preheat oven to 170°C/150°C fan-forced. Line a baking tray with baking paper. Place potatoes in a saucepan. Cover with cold water. Bring to the boil over high heat. Reduce heat to medium. Cook for 12 minutes or until just tender. Drain. Return to pan.
    Step 2

    Combine garlic, rosemary, oil and salt in a bowl. Add to potatoes. Toss to combine.
    Step 3

    Arrange potatoes, in a single layer, on prepared tray. Roast on top shelf in oven for 40 to 50 minutes, turning once, or until golden and crisp. Potatoes are cooked at same temperature as lamb (see related recipe). If roasting potatoes only, cook at 200°C/180°C for 35 minutes or until golden and crisp.
