The beautiful, fluffy, salted potato filled to the brim with melted butter, cheese, bacon and a dollop of sour cream makes my mouth water every time! My kids and husband prefer to have theirs mashed up and put into a creamy soup, so this baked potato soup recipe was born for them. You can also add a spoon of sour cream if you so desire, but it is already creamy with the milk that is added in the baking process…also I ran clean out when I made this last because the day before was taco Tuesday! This soup only takes about a half hour start to tummy. The cut up potatoes cook really fast in an already boiling pot of water, so get that started while you are peeling and cutting. I hand whichever kid is hanging around a block of cheese and a cheese grater, because I don’t love that job, but I refuse to buy pre-shredded cheese on principle. The principle being that I have children who can do that kind of thing for me, and it tastes better. :)

Ingredients
1 lb bacon cooked and chopped
3 cups milk
5 baking potatoes peeled, and chopped into cubes
1 tsp pepper
Salt to taste
4 TBS butter
2 cups shredded cheddar
Instructions
Boil potatoes in a large pot, salt water to taste
Drain all but about 1 cup of water, when potatoes are soft enough to be stabbed with a fork with little effort
Add bacon, butter, pepper and milk
Put pot back on stove on medium heat, stir until butter is melted and all ingredients are combined
With immersion blender, or potato masher, blend soup to desired consistency.
Serve with cheddar cheese and salt to taste.
Baked potatoes are amazing. This variation has vertical slices made before baking, making the top cook to a crunchy, thick-cut potato chip consistency, with a creamy baked potato centre. It's the best of both worlds!
This fun trick can be done on almost any tuber. I used white and Russet potatoes, and a sweet potato.
Preheat oven to 425°F
Using a sharp kitchen knife, carefully start making a series of vertical cuts width-wise through the potato, making sure not to cut all the way through - cuts should only be 3/4 of the way through the potato.
Place sliced potatoes on an baking sheet slices up, then drizzle top with oil, salt and pepper.
Bake for 50 minutes. Time may vary depending on size of potato and oven.
After my potatoes were done I decided to add some shredded cheese, green onion and sausage bits. These tasty tubers are good as a side to any meal, or just on their own for a gameday snack!

• Use a russet potato — the dirty-looking brown kind, not the waxy kind — because it’s starchy and works best for this kind of thing.

• Line a baking sheet with parchment paper or aluminum foil.
• Scrub the potato clean under water, dry it with a towel, then poke a few holes through to the center of it with a fork.
• Bake the potato for one hour or until tender.
• Slice into it, fluff it up inside with a fork, then add butter, salt, and pepper.
