    3 1/2 cups potatoes, peeled and diced (I keep mine with the peel)
    1/3 cup celery, diced
    1/3 cup onion, finely chopped
    1 cup chopped carrot
    1 -2 cup ham, diced and cooked
    3 1/4 cups water or 3 1/4 cups chicken broth or 3 1/4 cups ham stock
    2 tablespoons chicken bouillon granules (omit if using chicken broth)
    salt (to taste)
    1 teaspoon pepper
    5 tablespoons butter
    5 tablespoons flour
    2 cups milk
    2 cups cheddar cheese, shredded

Directions:

    Combine potatoes, celery, onion, ham, and water/broth in stockpot and bring to boil.

    Then cook over medium heat until potatoes are tender.

    Stir in the chicken bouillon, salt (if using), and pepper.

    In separate saucepan, melt butter over medium-low heat. Whisk in flour and cook stirring constantly until thick.

    Slowly stir in milk as not to allow lumps to form and all milk is added. Continue to stir until thick (4-5 minutes).

    Add in cheese and stir until melted.

    Stir the cheese mixture into the stockpot and cook until heated through. (I also will break up some of the potatoes for thickness. It gets thicker as it cools and next day).

    6 -8 medium potatoes
    1/4 cup butter
    1/2 cup flour
    6 cups milk
    2 teaspoons chicken bouillon
    1/2 teaspoon salt
    1/4 teaspoon pepper
    1/2 lb cheddar cheese
Directions:

    Peel, cube, boil, drain and "mush" potatoes to the consistency you like (I like them lumpy, but my kids like smaller pieces).

    In separate pan, melt butter, add flour and cook while stirring for about a minute or so.

    Add half the milk and stir until lumps are out of flour mixture.

    Add remaining milk and on med-high heat, heat to a boil.

    Stir almost constantly or it will scorch.

    After boiling, turn heat off and add remaining ingredients

    1182.95 ml chicken stock or 1182.95 ml water
    236.59 ml red lentil
    3 medium onions
    750 g sweet potatoes
    5 garlic cloves
    9.85 ml ground cumin
    2.46 ml ground turmeric
    1.23 ml cayenne
    118.29 ml coriander, chopped (or less to your taste)
    1 lemon
    salt and black pepper

    Peel and roughly chop the onions and sweet potatoes - can be chunky.

    Combine with the stock or water, lentils, garlic, cumin, cayenne and turmeric in a pot.

    Cover and bring to the boil. Simmer until the potatoes and lentils are cooked - about 20-30 minutes.

    Puree the soup, adding in the coriander and the juice of the lemon. Add salt and pepper to taste (lots of pepper for me).
