Classic Potato Salad

There was a little sandwich place that we used to eat at years ago (in my married days), and this little place made the best potato salad.  I used to love to order a grilled ham and cheese (which was grilled with mayo instead of butter), a side of their creamy potato salad and a Coke.  Because their potato salad was so simple…with so few ingredients…it wasn’t hard to replicate.  The little sandwich place is long gone…but I still my adaptation of their classic potato salad to remember them by.

My family loves a good homemade potato salad …and this is the only potato salad recipe that we ever make.  It’s always a huge hit.  I’ve taken it to my share of potlucks and the platter is always scraped clean.  This creamy potato salad is just a nice, simple homemade potato salad that goes well with almost anything you would serve it with at a barbecue or picnic.  It’s a perfect  to have chilling in the fridge with sandwiches on triple-digit days.

Classic Potato Salad

6 large russet potatoes, cleaned and cut in  half

2 cups celery, chopped

1-1/2 cups claussen dill pickles (from the refrigerator section)

1/2 cup green onion chopped

4 tablespoons parsley, finely chopped

1 teaspoon kosher salt

freshly ground black pepper to taste

1-1/2 cup Best Foods or Hellmann’s real mayonnaise

Directions

Boil the potatoes in a large pot for approximately 20 minutes or until a fork tender.  Drain the potatoes and set aside to cool for approximately 5 minutes.   Remove the skins from the potatoes (the potatoes will still be warm to the touch when you peel them), and place the skinned potatoes in a large bowl.  Run a knife through the potatoes to coarsely chop them.  Add the celery, pickles, onions, parsley, salt and pepper to the potatoes and toss.   Fold in the mayonnaise to coat well.  You’ll end up with a creamy potato salad that still has some soft chunks of potatoes.

Ingredients:

    ¾ cup mayonnaise
    1 tbsp yellow mustard
    4 cups potato (½“cubed)
    ½ cup carrot (finely chopped)
    ½ cup celery (sm chopped)
    ½ cup onion (finely chopped)
    ½ cup pickles (sm chopped)
    3 hard-cooked boiled eggs (chopped)
    Salt & pepper
    Paprika (for garnishing)

Method

Bring a large pot of salted water to a boil. Add cubed potatoes and carrots; cook until tender (approx 15 minutes). Drain, let cool and set-aside.

In a large bowl, combine mayonnaise and mustard. Mix potato, carrot, celery, onion, pickles and chopped eggs. Gently mix. Season to taste. Chill for an hour. Garnish with a pinch of paprika prior to serving. Excellent by itself or as a side-dish.
