Chef Krissy says: Below is my mom Mary Ann’s recipe for Party Potatoes (or Party Pah-tay-tahs as she calls them), which is a Midwestern delicacy. Equally welcome at any celebration or a lonely night on the couch (try seasoning with tears if you go this route), these cereal-topped potatoes are where the party’s at.

2 sticks of butter
1 can cream of chicken soup
8-10 oz daisy sour cream
2 cups of sharp shredded cheddar cheese
1/3 – 1/2 chopped onion
1 package frozen ore ida hash brown potatoes (southern style)
pepper
cayenne pepper (to taste)
3/4 bag of corn flakes, slightly crushed…you can really add as much as you like. I enjoy sprinkling half of my corn flakes at the beginning, and then the other half about 10-15 min before the potatoes are finished.

    Melt the butter in a large saucepan. Add the soup, cheese and sour cream. Stir until smooth.
    Add the onion and potatoes. Season with pepper and cayenne pepper.
    Spread in a 9×11 baking dish and top with corn flakes. bake at 375 degrees for 45 mins or 350 for 1 hour, depending on how fast you want this in your stomach.

Mormon Funeral Potatoes

6 cups diced potatoes
1 can (10 3/4 oz.) condensed cream of chicken soup
1 stick butter, melted
1 cup sour cream
2 cups cheddar cheese, grated, divided
1/4 c. grated onion (optional)
Salt and pepper to taste

Combine soup, butter, sour cream, 1 c. cheese, onion, salt and pepper. Mix well. Add the potatoes and stir gently until combined.
Place potato mixture in a 2-3 quart casserole dish or 9 x 13-inch baking pan. Top with the remaining 1 c. cheese.
Bake uncovered at 350 degrees for 30-45 minutes or until hot and bubbly.
These are our family’s famous “Party Potatoes.” They have been modified in recent years, yet we are quite attached to the original holiday recipe. These potatoes are one of the more involved aspects of our Thanksgiving dinner. It involves peeling, boiling, mashing and baking the potatoes.

The best way to really do this is to do everything the night before and then bake them on Thanksgiving Day.
Cream Cheese Mashed Potatoes
Servings
6-8 potatoes
Ingredients

    8 large russet potatoes, peeled
    8 oz softened cream cheese
    1/2 cup sour cream

    1/4 cup melted butter
    3 tsp paprika

Directions

    Preheat oven to 325 deg F
    Boil potatoes until tender, drain and mash.
    Beat the sour cream, milk and cream cheese until well blended.
    Using a large mixer, slowly add the potatoes to the cream mixture. DO NOT over-beat.
    Season with salt.
    Grease casserole dish with butter and scoop potatoes into dish.
    Brush top with melted butter.
    Sprinkle with paprika. Bake/brown for 20-30 minutes.

Cook Time: 20 - 30 Minutes
Total Time: 1:05 - 1 Hour 30 Minutes
